Omelette Curry: A Simple and Delicious Recipe

Ingredients
For the Omelette
- 4 Eggs
- 1/4 Onion (finely chopped)
- 1 Green chilies (finely chopped)
- 2 tablespoons Cilantro (finely chopped)
- to taste Salt
- 1/4 teaspoon Black pepper
- 2-3 tablespoons Oil (for making omelette)
For the Curry
- 3 tablespoons Oil
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- 1 sprig Curry leaves
- 1 medium Onion (finely chopped)
- 1 tablespoon Ginger-garlic paste
- 1 medium Tomato (pureed)
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chili powder (adjust to taste)
- 1.5 teaspoons Coriander powder
- 1/2 teaspoon Garam masala
- 1-1.5 cup Water (adjust consistency)
- to taste Salt
- 2 tablespoons Cilantro (chopped, for garnish)
Instructions
- Prepare the omelettes: In a bowl, whisk together eggs, finely chopped onion, green chilies, cilantro, salt, and black pepper.
- Heat 1 tablespoon of oil in a pan over medium heat. Pour a portion of the egg mixture to make a thin omelette. Cook until set and lightly browned on both sides. Repeat with the remaining egg mixture to make more omelettes.
- Cut the omelettes into desired shapes (squares or triangles).
- Prepare the curry: Heat the remaining oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.
- Add curry leaves and finely chopped onion. Sauté until the onion turns golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add tomato puree and cook until the oil separates from the masala.
- Stir in turmeric powder, red chili powder, coriander powder, and garam masala. Sauté for another minute, adding a splash of water if the masala is sticking.
- Pour in the water and bring the curry to a simmer. Add salt to taste and let it cook for 5-7 minutes for the flavors to meld.
- Gently add the cut omelette pieces to the simmering curry. Do not stir vigorously to prevent the omelette from breaking.
- Cover the pan and let it cook for 2-3 minutes on low heat, allowing the omelette to absorb the flavors.
- Garnish with chopped cilantro and serve hot.
