- 250 grams Green Beans (washed, trimmed, and finely chopped)
- 1/4 cup Fresh Coconut (grated)
For Tempering
- 2 tablespoons Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Urad Dal (Black Gram Lentils)
- 1 teaspoon Chana Dal (Split Bengal Gram)
- 1 sprig Curry Leaves
- 2-3 Dry Red Chillies (broken into two)
- 1/4 teaspoon Asafoetida (Hing)
Seasoning
- 1/4 teaspoon Turmeric Powder
- Salt (to taste)
Instructions
- Heat oil in a pan or kadai over medium heat.
- Add mustard seeds and let them splutter.
- Add urad dal and chana dal. Fry until they turn golden brown.
- Add dry red chillies, curry leaves, and asafoetida. Sauté for a few seconds.
- Add the finely chopped green beans, turmeric powder, and salt.
- Mix well and cover the pan. Cook on low heat, stirring occasionally, until the beans are tender but still retain some crunch (around 10-15 minutes).
- If the beans are too dry, you can sprinkle a little water, but avoid adding too much.
- Once the beans are cooked, add the grated fresh coconut.
- Mix well and cook for another 2-3 minutes, allowing the coconut flavor to infuse.
- Serve hot.
