Beans Poriyal is a simple yet flavorful South Indian dry stir-fry made with green beans, tempered with mustard seeds, lentils, and finished with fresh coconut. It's a popular vegetarian side dish known for its quick preparation and healthy ingredients.

Ingredients

Main Ingredients

  • 250 grams Green Beans (washed, trimmed, and finely chopped)
  • 1/4 cup Fresh Coconut (grated)

For Tempering

  • 2 tablespoons Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal (Black Gram Lentils)
  • 1 teaspoon Chana Dal (Split Bengal Gram)
  • 1 sprig Curry Leaves
  • 2-3 Dry Red Chillies (broken into two)
  • 1/4 teaspoon Asafoetida (Hing)

Seasoning

  • 1/4 teaspoon Turmeric Powder
  • Salt (to taste)

Instructions

  1. Heat oil in a pan or kadai over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add urad dal and chana dal. Fry until they turn golden brown.
  4. Add dry red chillies, curry leaves, and asafoetida. Sauté for a few seconds.
  5. Add the finely chopped green beans, turmeric powder, and salt.
  6. Mix well and cover the pan. Cook on low heat, stirring occasionally, until the beans are tender but still retain some crunch (around 10-15 minutes).
  7. If the beans are too dry, you can sprinkle a little water, but avoid adding too much.
  8. Once the beans are cooked, add the grated fresh coconut.
  9. Mix well and cook for another 2-3 minutes, allowing the coconut flavor to infuse.
  10. Serve hot.
