Murungakeerai Poriyal (Drumstick Leaves Stir-fry): A Wholesome South Indian Side Dish

Ingredients
Main Ingredients
- 2 cups Murungakeerai (Drumstick Leaves) (cleaned and finely chopped)
- 2 tablespoons Coconut Oil or Gingelly Oil
For Tempering
- 1 teaspoon Mustard Seeds
- 1 teaspoon Urad Dal (Split Black Gram)
- 1 sprig Curry Leaves
- 2-3 Dry Red Chilies (broken into two)
- 1/4 teaspoon Asafoetida (Hing)
Other Ingredients
- 1/2 medium Onion (finely chopped)
- 2-3 tablespoons Grated Coconut (fresh or frozen)
- Salt (to taste)
Instructions
- Clean the drumstick leaves thoroughly by removing them from the stalks. Wash them in water and drain well. Chop them finely.
- Heat the oil in a pan or kadai over medium heat.
- Add mustard seeds. Once they splutter, add urad dal and let it turn golden brown.
- Add dry red chilies, curry leaves, and asafoetida. Sauté for a few seconds.
- Add the finely chopped onion and sauté until it becomes translucent.
- Add the chopped drumstick leaves and salt to taste. Mix well.
- Cover the pan and cook on low heat for 5-7 minutes, or until the leaves are tender. You may sprinkle a little water if needed, but drumstick leaves cook quickly and release their own moisture.
- Once the leaves are cooked and the moisture has evaporated, add the grated coconut. Mix well and cook for another 1-2 minutes.
- Check for salt and adjust if necessary. Turn off the heat.
- Murungakeerai Poriyal is ready to be served hot.
