Paal Payasam: A Creamy South Indian Rice Pudding

Description

Paal Payasam is a classic South Indian dessert, a rich and creamy rice pudding made with milk, rice, and sugar. It's a staple for festivals and special occasions, offering a comforting and subtly sweet flavor.

Ingredients

For the Paal Payasam

  • 1.5 liters Milk (Full-fat milk recommended)
  • 1/4 cup Basmati Rice (Or any short-grain rice, washed and soaked for 15 minutes)
  • 1/2 cup Sugar (Adjust to taste)
  • 1/4 teaspoon Cardamom Powder

For the Garnish

  • 1 tablespoon Ghee
  • 10-15 Cashews (Halved or whole)
  • 1-2 tablespoons Raisins

Instructions

  1. In a heavy-bottomed pot or pressure cooker, combine the milk and soaked rice.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
  3. Once boiling, reduce the heat to low and simmer, stirring frequently, until the rice is cooked and the milk has thickened to a creamy consistency. This will take about 45-60 minutes. If using a pressure cooker, cook for 2-3 whistles on low heat after the first whistle, then let the pressure release naturally.
  4. Stir in the sugar and cardamom powder. Cook for another 5-10 minutes until the sugar is dissolved and the flavors have melded.
  5. While the payasam is simmering, heat ghee in a small pan over medium heat. Add cashews and fry until golden brown. Then add raisins and fry until they plump up.
  6. Pour the fried cashews and raisins along with the ghee into the prepared payasam.
  7. Stir gently and serve hot or chilled.
