Thirattipal, also known as Palkova, is a traditional South Indian sweet made from slow-cooked milk and sugar. Its rich, caramelized flavor and melt-in-your-mouth texture make it a beloved dessert and snack.

- 1 liter Whole Milk (Full-fat milk is recommended for best results)
- 1/4 cup Sugar (Adjust to taste, or use more for a sweeter version)
- 1 tablespoon Ghee (Clarified Butter) (Optional, for richness and preventing sticking)
Instructions
- Pour the whole milk into a large, heavy-bottomed pan or a non-stick pan.
- Bring the milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
- Once the milk boils, reduce the heat to low and let it simmer. Continue to stir frequently, scraping down the sides and bottom of the pan to prevent milk solids from burning.
- The milk will start to thicken and reduce in volume over time. This process can take 1-1.5 hours, so be patient and keep stirring.
- As the milk thickens and turns a pale yellow color, add the sugar and the optional ghee. Stir well to combine.
- Continue to cook and stir, the mixture will become thicker and start to leave the sides of the pan.
- Keep cooking until the mixture resembles a soft dough or fudge-like consistency and has a light brown color from caramelization.
- Once the desired consistency is reached, remove the pan from the heat.
- You can serve it warm or let it cool completely before serving. It will thicken further as it cools.
