Kollu Thuvaiyal(Horsegram Chutney): A Nutritious Accompaniment

Description

Kollu Thuvaiyal is a traditional South Indian chutney made from horsegram, a lentil known for its high nutritional value and earthy flavor. This rustic chutney is a perfect accompaniment to rice dishes and offers a healthy and flavorful punch.

Ingredients

For the Thuvaiyal

  • 1 cup Horsegram (Kollu) (washed and dried)
  • 4-6 Dry Red Chillies (adjust to taste)
  • small lemon sized ball Tamarind
  • 2-3 Garlic Cloves (optional)
  • 1 tablespoon Urad Dal (Black Gram)
  • a pinch Asafoetida (Hing)
  • few Curry Leaves
  • 1-2 tablespoons Gingelly Oil (Sesame Oil)
  • to taste Salt
  • as needed Water

Instructions

  1. Heat a tablespoon of oil in a pan and dry roast the horsegram on medium heat until it turns slightly golden brown and fragrant. Be careful not to burn it.
  2. Remove the roasted horsegram and set aside. In the same pan, add a little more oil and roast the dry red chillies, urad dal, garlic (if using), asafoetida, and curry leaves until the urad dal turns golden brown and the chillies are slightly puffed.
  3. Let the roasted ingredients cool down completely.
  4. In a blender or food processor, add the roasted horsegram, roasted chillies and other ingredients, tamarind, and salt to taste.
  5. Add a little water at a time and grind to a coarse or fine paste, depending on your preferred consistency. Do not add too much water at once.
  6. Transfer the Kollu Thuvaiyal to a serving bowl.
