  • 900 grams Maris Piper or Yukon Gold potatoes (peeled and cut into 2cm chunks)
  • 50 grams Unsalted butter (for sautéing)
  • 2 pieces Large leeks (cleaned and thinly sliced)
  • 1 piece Yellow onion (finely diced)
  • 3 pieces Garlic cloves (minced)
  • 200 grams Mature English Cheddar (grated)
  • 3 tablespoons Heavy cream (for extra richness)
  • 1/2 cup Fresh parsley (finely chopped)
  • 1 teaspoon Fresh thyme (leaves only)
  • 1/4 teaspoon Nutmeg (freshly grated)
